  • Medium saucepan
  • Whisk
  • Strainer

Ingredients


  • 2 Tbsp olive oil
  • 1 c yellow onion
    - chopped
  • 1/2 c celery
    - chopped
  • 8 oz mushroom
    - chopped - fresh button or cremini
  • 3 c vegetable broth
    - plus, extra if you plan to reheat the gravy
  • 2 sprigs of thyme
  • 1/4 c plant based butter
    - unsalted
  • 1/4 c flour
    - all-purpose
  • 1/4 c dry white wine
  • 1 Tbsp soy sauce
  • 1/4 tsp ground black pepper
    - plus more to your taste
  • salt
    - to taste

Preparation Instructions


  • Measure and prepare ingredients. Set aside.

  • Gather bowl and strainer. You strain gravy during the Cooksy recipe. Set bowl & strainer near stovetop.

Cooking Instructions


  • Preheat to 273°F
  • Add 2 Tbsp olive oil to pan
  • Add 1 c yellow onion to pan
  • Add 1/2 c celery to pan
  • Stir ingredients

  • Add 8 oz mushroom to pan
  • Stir ingredients
  • Stir ingredients

  • Add 3 c vegetable broth to pan
  • Note: You are going to bring gravy to a boil then once boiling bring to a simmer.
  • Note: Bring to a simmer.
  • Stir ingredients
  • Add 2 sprigs of thyme to pan
  • Remove pot from stovetop and strain mushroom mixture. Set aside till mushroom broth is needed.
  • Put empty pot on stovetop.
  • Add 1/4 c plant based butter to pan
  • Note: Melt butter.
  • Stir ingredients
  • Bring to a boil.
  • Add 1/4 c flour to pan
  • Whisk continuously
  • Keep whisking often
  • Bring to a simmer
  • Gradually add in broth mixture. Whisk often.
  • Bring to a boil. Whisk often.
  • Add 1/4 c dry white wine to pan
  • Add 1 Tbsp soy sauce to pan
  • Add 1/4 tsp ground black pepper to pan
  • Note: Once boiling then bring to a simmer to thicken gravy.
  • Remove from heat.

Finishing Instructions


  • Add salt and pepper to taste.
  • Serve immediately.
  • If reheating on a stovetop then whisk in a little broth to thin out gravy.
